Servings: About 3-4
Prep Time: 10 minutes / Cook Time: 25 minutes

Ingredients

Creamy Mint Chutney
1 cup of mint leaves
½ cup cilantro
1-2 green chilis (your spice preference)
1 clove of garlic
¼ inch of ginger
1 cup of Greek yogurt
½ tsp of sugar
1 tsp of roasted cumin & salt to taste

Paneer Marinade
3 cups of cubed paneer
½ cup of Greek yogurt
3 tablespoons of tandoori masala
1 teaspoon of cumin
1/2 tablespoon lime juice & salt to taste

Taco Toppings
Small flour tortillas
½ cup of thinly sliced red cabbage
½ cup of diced onion
Cilantro for garnish

Directions

Marinate the paneer: Combine the yogurt, tandoori masala, cumin, and lime juice in a large mixing bowl. Mix well until all the seasonings have combined into a smooth paste
Add paneer and gently mix until all the paneer has been evenly coated
Set aside for 30 mins

Make the creamy mint chutney while paneer marinates
Thoroughly wash mint and cilantro leaves and add them to a blender.
Add ginger, garlic, green chili, 1 tablespoon of the 1 cup of yogurt, salt, sugar, and a splash of water.
Blend for 15 seconds, or until everything has been blended into a smooth paste. (Note: don’t over blend the ingredients because it could cause the chutney to become bitter)
Pour the chutney in a mixing bowl and add the remaining yogurt, roasted cumin, and a splash of water
Mix well until the chutney becomes creamy
Add salt to taste

Pan-fry Paneer: Over a medium heat, add ½ tablespoon of butter
Once the butter has melted, add the marinated paneer and fry the paneer on one side for 5 minutes
Once the paneer has developed a crust on the bottom, flip the paneer to evenly fry the other sides – about 15 minutes
Once the paneer has finished frying, it’s time to assemble your taco!
Lightly heat up a flour tortilla on a clean pan
Add the pan-fried paneer, sliced cabbage, diced onion, a squeeze of lime juice, and the creamy mint chutney. Add a cilantro leaf for garnish.
