Hello Saathee readers! Looking for a quick, delicious, and family-friendly weeknight dinner? These Chickpea Masala Tacos are packed with flavor and come together in just 30 minutes! Roasted, spiced chickpeas add a satisfying crunch, while a creamy, easy-to-make avocado sauce balances everything with a touch of freshness. Not only are they a hit for taco night, but they also make a great meal prep option—the chickpeas and avocado sauce can double as hearty, flavorful salad toppers for a lighter, carb-free twist. Perfect for a crowd or just a cozy night in, these tacos will have everyone reaching for seconds!

Ingredients
Chickpeas:
1 can of chickpeas (15 oz), drained
1 tbsp olive oil
1 tsp salt
1/2 tsp dried oregano
1/2 tsp smoked paprika
2 tsp garlic powder
1 tbsp lime juice
1/2 tsp garam masala
Avocado Sauce:
1 avocado, sliced
1 tsp salt
Juice from 1/2 a lime
1/2 cup nonfat yogurt
1 cup cilantro, chopped
1 jalapeño, chopped
1 clove of garlic, chopped
Directions
Step 1: Preheat oven to 400° F. Toss in all the ingredients for the chickpeas together in a large bowl.
Step 2: Lay on a baking pan with parchment paper. Bake for 20 minutes or until crisp.
Step 3: While the chickpeas are being baked, blend all the ingredients for the avocado sauce together. (You can store this sauce in an airtight jar for up to 5 days.)
To assemble, enjoy on warm tortillas with the avocado sauce spread evenly and topped with the roasted chickpeas. Add fresh, home made Pico de Gallo or thinly chopped red onions for an extra punch of flavor!
