If you are looking for a quick and flavorful dish, then you have to try this Kathiyawadi Dahi Tikhari which requires minimal ingredients but has maximum taste and is so good that you will keep coming back for more! Dahi is a yogurt from the Indian subcontinent, known for its characteristic taste and consistency. The word dahi is derived from the Sanskrit word dadhi (“sour milk”), is one of the five elixirs (or panchamrita), and often used in Hindu rituals. This high protein, calcium, vitamins, and live culture, or probiotics Yogurt/Dahi enhances the gut microbiota, offers protection for bones and help prevent digestive problems. By adding flavors and spices you can turn dahi into a delectable dish to enjoy with your family and friends.

Ingredients
1 – 2 Cups Dahi (yogurt)
2 tsp vegetable oil
1 tsp mustard seeds
1 tsp cumin seeds
¼ tsp turmeric
¼ tsp hing (asafetida)
2 chilies, chopped
1 finely chopped onion
1 finely chopped tomato
8-10 cloves of garlic
2 tbsp red chili powder
1 tbsp garam masala
¼ tsp salt (or to taste)
2 tbsp chopped coriander
Directions
In a pan heat oil, mustard seeds, cumin seeds, hing and turmeric. Then add chopped chilies, onion and cook well on medium flame. Meanwhile in mortar and pestle make a Garlic Paste by adding the garlic, red chili powder, garam masala and salt. Pound together to make paste. Add a little water if needed.
Add finely chopped tomato and garlic paste to the pan and cook for one minute on low flame and add little warm water. Add spices like coriander powder, jeera powder, and salt to taste. Mix it well. Add chopped coriander and turn flame off.
Now add the dahi (yogurt), mix it well and keep stirring continuously for a minute to avoid it from getting curdled.
You can enjoy this delicious tikhari with soft roti, paratha, lightly toasted bread or with rice.
