Servings: About 30
Prep Time: 25-30 minutes

Ingredients

1 red potato, boiled and peeled

1 sweet potato, boiled and peeled

1 medium white onion, chopped finely

2 tbsp olive oil

3 tbsp minced ginger

1 ½ tsp salt

8 garlic cloves. crushed

1 tbsp madras curry powder

1 tbsp garam masala

3 green chilis, finely chopped

1/2 light coconut milk

1 tsp turmeric

2 packages of phyllo cups (or 30 cups)

1/4 cup chopped cilantro, tomatoes and onion for topping

Directions

Step One: Mash both potatoes in a bowl and set aside.
Step Two: Heat oil in a pan and add onions. Cook until translucent.
Step Three: Add garlic, ginger, curry powder, garam masala, turmeric, salt and green chilis.
Step Four: Mix in the potatoes and coconut milk. Cook for 5-10 mins.  Allow it to cool in the fridge.
Step Five: Preheat the oven to 350 degrees Fahrenheit and insert empty phyllo shells for 5 mins.
Step Six: Place about a tsp of the potato filling in each cup and top with cilantro, onion and tomatoes!
